A high elevation Oolong from Central Taiwan where ideal growing conditions allow tea gardens to thrive at 7500 feet. The cultivar used is qing xin, which adapted well to this mountainous terrain. Handpicking and processing of the tea limits production size, adding to the scarcity of this celebrated tea. For a total tea experience start by rinsing the brewing vessel first with water close to boiling before adding the tightly rolled leaves. By opening up slowly this allows each infusion to provide new flavor notes, followed by a sweet finish. This tea will yield multiple infusions.
